Super Bowl Sunday

Usually I don't see the entertainment factor is watching large men in little pants chase each other a grass field after a lopsided ball. I AM however a fan of Super Bowl Sunday. There are 2 very good reasons that put this day on my favorites list

#1 - FOOD!
This year I'm going to try making homemade BBQ Chicken Pizza.


INGREDIENTS
1 can (13.8 oz) Pillsbury® refrigerated classic pizza crust
1/2 cup chopped red onion
1 container (18 oz) refrigerated honey hickory barbeque sauce with shredded chicken, large pieces cut up
1/2 cup crumbled feta cheese (2 oz)
1 cup shredded Swiss cheese (4 oz)
DIRECTIONS
  • 1Heat oven to 400°F. Grease with shortening or spray large cookie sheet with cooking spray. Unroll dough; place on cookie sheet. Starting at center, press out dough into 14x12-inch rectangle to form crust. Bake 10 minutes.
  • 2Meanwhile, stir onion into barbeque sauce with shredded chicken. Microwave on Medium (50%) 4 minutes, stirring once halfway through heating.
  • 3Remove partially baked crust from oven. Spoon hot chicken mixture over crust to within 1/4 inch of edge. Sprinkle feta cheese and Swiss cheese evenly over top.
  • 4Return to oven; bake 6 to 11 minutes longer or until crust is deep golden brown and cheese is melted and bubbly. Cut into squares to serve.
If your family isn’t fond of feta cheese, replace it with more Swiss or use Cheddar cheese.


Tad would cry if I didn't get his Spicy Buffalo Chicken Wings.Ingredients
• 10 to 12 chicken wings
• 3 tablespoons butter, melted
• 1/4 cup hot sauce (we use a red taco sauce)
• 1 tablespoon honey
• 2 teaspoons paprika
• 1/4 teaspoon salt
• 1/8 teaspoon ground pepper
Directions
1. Cut off the wing tips at the first joint.
2. In a shallow dish, mix the melted butter, hot sauce, honey, paprika, salt, and pepper together. Tumble the chicken wings through the sauce, cover with plastic, and marinade for 30 to 60 minutes at room temperature. (For safety reasons, do not leave the chicken out for an extended period.)
3. Place the prepared wings on a boiler pan. Set the oven to broil. Set the pan about five inches from the elements. Broil for ten minutes or until done. Serve hot.

And his favorite Quacamole/Salsa dip.
Ingredients
  • 1 medium ripe avocado, halved, seeded and peeled
  • 4-1/2 teaspoons lemon juice
  • 1 small tomato, seeded and finely chopped
  • 1/4 cup finely chopped onion
  • 1 tablespoon finely chopped green chilies
  • 1 garlic clove, minced
  • 1/4 teaspoon salt, optional
  • Tortilla chips

Directions

  • In a large bowl, mash avocado with lemon juice. Stir in the tomato, onion, chilies, garlic and salt if desired. Cover; chill. Serve with tortilla chips. Yield: about 1-1/2 cups.

But my favorite is Chocolate Chip Cookies. Nothing beats my mom's favorite recipe!
INGREDIENTS:
  • 3/4 stick Crisco® Baking Sticks Butter Flavor All-Vegetable Shortening
  • OR 3/4 cup Crisco® Butter Flavor All-Vegetable Shortening
  • 1 1/4 cups firmly packed light brown sugar
  • 2 tablespoons milk
  • 1 tablespoon vanilla extract
  • 1 large egg
  • 1 3/4 cups Pillsbury BEST® All Purpose Flour
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 (6 oz.) package semi-sweet chocolate chips (1 cup)
  • 1 cup coarsely chopped pecans (optional)

PREPARATION DIRECTIONS:

  1. HEAT oven to 375ºF.
  2. COMBINE shortening, brown sugar, milk and vanilla in large bowl. Beat at medium speed of electric mixer until well blended. Beat in egg. Combine flour, salt and baking soda. Mix into shortening mixture until just blended. Stir in chocolate chips and nuts.
  3. DROP by rounded measuring tablespoonfuls 3 inches apart onto ungreased baking sheet.
  4. BAKE 8 to 10 minutes for chewy cookies, or 11 to 13 minutes for crisp cookies. Cool 2 minutes on baking sheet on a cooling rack. Remove cookies to rack to cool completely.

The second part of Super Bowl Sunday that makes it awesome is.......COMMERCIALS! I'd be perfectly happy reading a book through the entire game and just paying attention to the commercials they are almost always the best commercials of the year.
