It has been a long time since I've found a recipe I liked this much that required so little effort! This dish is wonderful! And it's even open to a little tweaking, I didn't have lemon pepper or dijon mustard, but regular pepper and honey mustard worked great. Although I do think it'd be a little better with dijon mustard. I scored this recipe from the blog, Plain Chicken.
Ingredients:
4 boneless chicken breast
3/4 cup honey
1/2 cup Dijon mustard
1 tsp lemon juice
1/2 tsp paprika
lemon pepper to taste
4 Tbsp bacon, cooked and chopped (I used Oscar Meyer bacon bits in the yellow bag)
1 cup shredded mozzarella cheese
Preheat oven to 375.
Season chicken breasts with lemon pepper. Place in 9x13 baking dish.
Combine honey, mustard, lemon juice and paprika. Pour over chicken. Bake for 20-25 minutes.
Top each chicken breast with 1 Tablespoon of bacon and 1/4 cup mozzarella cheese. Continue to bake until cheese is starting to brown (about 10 minutes).

Honey Roasted Red PotatoesIngredients:
- 1 pound red potatoes, quartered
- 2 tablespoons diced onion
- 2 tablespoons butter, melted
- 1 tablespoon honey
- 1 teaspoon dry mustard
- 1 pinch salt
- 1 pinch ground black pepper
- Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray.
- Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
- Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.
I absolutely recommend that you make this dish! It was so easy to put together and so delicious! My husband Tad loved it as well. I had the leftovers in a wrap with brown rice the next day and it was just as good! Enjoy!
