Easy & Seriously Delicious Cheesy Honey Mustard Chicken & Honey Roasted Red Potatoes

It has been a long time since I've found a recipe I liked this much that required so little effort! This dish is wonderful! And it's even open to a little tweaking, I didn't have lemon pepper or dijon mustard, but regular pepper and honey mustard worked great. Although I do think it'd be a little better with dijon mustard. I scored this recipe from the blog, Plain Chicken.
Cheesy Honey Mustard Chicken

Ingredients:

4 boneless chicken breast
3/4 cup honey
1/2 cup Dijon mustard
1 tsp lemon juice
1/2 tsp paprika
lemon pepper to taste
4 Tbsp bacon, cooked and chopped (I used Oscar Meyer bacon bits in the yellow bag)
1 cup shredded mozzarella cheese

Preheat oven to 375.

Season chicken breasts with lemon pepper.  Place in 9x13 baking dish.

Combine honey, mustard, lemon juice and paprika.  Pour over chicken.  Bake for 20-25 minutes.

Top each chicken breast with 1 Tablespoon of bacon and 1/4 cup mozzarella cheese.  Continue to bake until cheese is starting to brown (about 10 minutes).



And for the side dish I decided to try these potatoes that I found on the blog, Pia Recipes:
 Honey Roasted Red Potatoes

Ingredients:

  • 1 pound red potatoes, quartered
  • 2 tablespoons diced onion
  • 2 tablespoons butter, melted
  • 1 tablespoon honey
  • 1 teaspoon dry mustard
  • 1 pinch salt
  • 1 pinch ground black pepper
Instructions:
  1. Preheat oven to 375 degrees F (190 degrees C). Lightly coat an 11x7 inch baking dish with nonstick cooking spray.
  2. Place potatoes in a single layer in prepared dish, and top with onion. In a small bowl, combine melted butter, honey, mustard, salt and pepper; drizzle over potatoes and onion.
  3. Bake in the preheated 375 degrees F (190 degrees C) oven for 35 minutes or until tender, stirring halfway through the cooking time.


I absolutely recommend that you make this dish! It was so easy to put together and so delicious! My husband Tad loved it as well. I had the leftovers in a wrap with brown rice the next day and it was just as good! Enjoy!

Save Veronica Mars: 3 Reasons You Should

I have been on a Blog-cation for a while since we moved states and I had baby #3, and to be honest I'd been debating about whether or not I wanted to come back to it. Today, however, I saw a cause that spurred me into action!

So now that we're all up to date, let me tell you that it was a very tragic day when they didn't renew Veronica Mars for a 4th season, ESPECIALLY since they left the fans with quite a cliff hanger. Since then everyone from the fans to the director Rob Thomas, to the actors themselves has been trying to get a Veronica Mars movie made. All attempts were unsuccessful, mostly because Warner Bros. didn't believe there was enough interest in the show to spend the money and time on a full scale movie. 

Well last week Rob Thomas decided to try something new and give it one more shot. There is a website named Kickstarter that is dedicated to people/businesses who are trying to raise money for things. They can make a Kickstarter page and people can log on and donate to their cause. Rob Thomas got together with the cast and Warner Bros. and worked out a plan to make this movie. The cast will be exeptionally generous where there wages and schedule are concerned and Warner Bros. agreed to cooporate if enough people join together. Now all they needed was funding. 

Rob and crew decided that they needed a minimum of $2 Million dollars to do this, so last week they opened their own Kickstarter site and asked the fans who had been begging for this movie to help out. They gave themselves 30 days to accomplish this goal, and offered different prizes to the people who donated to the cause. Ranging from behind the scenes updates to an actual speaking role in the movie! You can donate as little as $1.

I believe that this was the biggest goal to be tackled in this manner, and I am proud to say that the Veronica Mars fans only needed 11 hours to raise the $2 million! Now they are not stopping there, they are accepting donations for the full 30 days, because the more money donated, the better the movie will be. Currently they are up to almost 3.6 million dollars. So if you're wondering to yourself, that's great, but why should I care enough to donate? I have a few reason for you.

How many people can say that they have helped get a movie they were hoping would be made get off the ground? It really is incredibly amazing that regular people like us can take part in this.

If you've ever had a show you loved get canceled before it's time you know how heart breaking it is to be left hanging. Forever wondering what happened to characters who have been like family and friends to you. Now is your chance to find that closure you have been searching for.

My Favorite Young Adult Books from the 90's

Today I met a woman in a store who was telling me about her two boys. One who rarely picks up a book, and one who devours them like he's starving. I don't know what makes the difference in people that love to read and people who avoid it, but I'm so glad I found my way into the fantasy world that books reveal to you. 

I know that kids today have so many choice from Harry Potter to A Diary of a Wimpy Kid, but when I was a kid these were a few of my favorites:

I've always loved a story with a girl who's got attitude! 
 

I had over 100 of these books when I was younger. I had a serious addiction, and I was originally planning to name my children Claudia, Stacy, Dawn, Kristy, and Mary Anne.
 

There's nothing better than an underdog that gives the snotty popular kid what's coming to him!
 

And who doesn't love a book of crazy that just gets crazier!

Oven Roasted Salmon, Seriously Good!

So I've never been a big fish person, but I've been trying to cook it more because Tad likes it so much. I found this method for cooking it on the Pioneer Woman's Blog and I've gotta say that it was phenomenal! I used to just put the salmon in foil with butter and lemon slices, but I've gotta say that this was better! I got my salmon at Costco, and I did add some lemon slices on top of it as well. Here's what The Pioneer Woman had to say:

Grab a beautiful salmon…
Drizzle with olive oil and season with salt and pepper.
Put it in a cold oven, turn on the heat to 400 degrees. Twenty-five minutes later, the salmon will be absolutely perfect. Tender, moist, flaky. A no-fail method!

Even Tad agreed that this was the best salmon we've ever had! Even as a leftover it was terrific!
