Snickerdoodles

So I found out this week that Tad's favorite cookies are Snickerdoodles, and in our almost 6 years of marriage I have never once made them for him. In fact I have never made them before. I found a recipe on Stephanie's Kitchen (A food blog that I've fallen for! If you love to bake you'll love this blog!), and Wes & I made a batch this morning.
It was so easy, and they turned out great!

The first thing you need is an assistant. I was lucky enough to have recruit Wes.
In a medium bowl, whisk together the flour, cream of tarter, baking soda and salt. Set aside.
Wes approved of the mixture.
Using a mixer, cream the sugar and butter until light and fluffy.
Add in eggs.
Slowly add the flour mixture and mix until well incorporated.Mix together the 1/4 cup sugar and cinnamon.
Shape in to 1 1/2 inch balls and dip in the cinnamon-sugar mixture. Try to keep your assistant from eating the bulk of the dough & sugar mixture if you can.
Place on a baking sheet lined with parchment paper and bake at 350 degrees for about 10-12 minutes. Do not over bake or they will be too crispy. (10 minutes was perfect for me)
Bake just until light and golden.Enjoy!
Snickerdoodles
makes 3 dozen

3 cups all purpose flour
2 teaspoons cream of tarter
1 teaspoon baking soda
1/4 teaspoon salt
1 1/2 cups granulated sugar
1 cup butter, softened
2 eggs

1/4 cup sugar
2 teaspoons ground cinnamon

1. In a medium bowl, whisk together the flour, cream of tarter, baking soda and salt. Set aside.
2. Using a mixer, cream the sugar and butter until light and fluffy. Add in eggs. Slowly add the flour mixture and mix until well incorporated.
3. Mix together the 1/4 cup sugar and cinnamon. Shape in to 1 1/2 inch balls and dip in the cinnamon-sugar mixture. Place on a baking sheet lined with parchment paper and bake at 350 degrees for about 10-12 minutes. Do not over bake or they will be too crispy. Bake just until light and golden.

I hope you give them a try!
